A real clementine is sweet, but that sweetness has depth. You taste the underlying acidity that makes it complex. The aroma when you peel it is almost violent because it’s alive—it hasn’t been gassed or preserved.
Clementines have been growing here for three generations. My grandfather chose this area on Mount Etna because the lava rock creates a balance between sweetness and freshness that you won’t find anywhere else. They aren’t sweeter than other Italian clementines—they’re different. They’re what happens when you let the volcano do its work.
When you take them out of the box, you’ll smell them immediately. If the scent is weak, we haven’t done our job properly. If it’s strong, you’ll understand why we waited until November to harvest.
